Don't be alarmed when you see the list of ingredients forSweet Potato and Lentil Soup. What? Apples and ginger alongside lentils and cumin? Are you kidding? Nope. This soup definitely has a unique flavour, one that makes me think of hot, exotic places. It's spicy sunshine in a pot.
I usually make this in my slow cooker and eliminate the step of sauteing the vegetables in butter. All you really have to do is throw all the ingredients except the yogurt into the slow cooker, turn it on and just leave it alone until the sweet potatoes are tender. Be warned, the soup isn't going to be pretty at this stage. You have to puree it to make it beautiful, and beautiful it will be.
The original recipe says it serves six. Um...maybe six ravenous football players maybe. I can eat this for lunch for a long time. It reheats really well.
The last time I made this I decided to try adding a spoonful of sour cream by my bowl. This added a completely new aspect to the soup. I don't know if I would say it made it better, just a different kind of delicious.
